Absinthe Romans circa 1900-1910. A cache of 3 bottles and a demijohn still containing 7 liters of this fabulous - and
never unearthed before - absinthe. And the m
ost interesting part of the story is that this incredible cache was found in the
attic of the house of one of the distiller's daughters - Madam
e Guichard - after her death.

Tasting notes from Marc Thuillier (absinthe Romans from the demijohn):
Color: very pleasant amber color with golden glints. Lightly hazy however.
Aroma before water: enchanting fragrances of flowers, toffee and candied fruits. Devilishly inviting!
Louche: not much to say, it builds perfectly.
Aroma after water: same enchanting fragrances but with a more floral aspect and a wormwood that now emerge and claim
a seat.
Taste: what an explosion in mouth! I don't even know who is leading the ballet anymore between the fruity and the floral
savors. It's very yummy, like a licorice candy from our childhood, it leaves you tasting it without a single word, without any
other thought than "more!".
Mouth feel:  creamy and candied, but also with a good deal of bitterness that stick to the palate for quite a long time.
Conclusion: in all frankness, this Absinthe Romans made it to the top 5 of all pre-ban absinthes I've tasted over the years.

Tasting notes from Simon Pedersen (absinthe Romans from the demijohn):
I got to try an incredibly rare absinthe this evening. Absinthe Romans circa 1900. Aged Melissa, artemisia absinthe,
gourmand anise and very unusual for absinthe: licorice root. In fact this works with the calamus and melissa really well. I
feel honoured to taste such museum level booze. This is the best absinthe I have ever tasted!!!!!! I can't imagine many
people alive today, have had the pleasure.
